Homemade gnocchi
Lele says "Gnocchi must swim in the sauce."
Ingredients - 1 kg. potatoes /patate
- 300 g flour /farina
- 1 egg /uova (ok I'm a wuss and put egg in my gnocchi!)
You can either boil or bake the potatoes; if boiled drain and peel when tender. If baked put the whole potoatos on a layer of kosher salt and bake until tender.Squash the potatoes with a potato ricer on to a big wooden board. Let them cool a bit. Sprinkle all the flour on top and mix well (using a "fluffing" motion)with a fork. Add egg. Mix well and then roll out a 1/2 inch diameter tubes of dough - cut into 1 inch pieces.
Plop the gnocchi in a pot of boiling salted water- cook for about 1 minute. Use a slotted spoon to remove the gnocchi and then add these little bundles of love to whatever sauce you are using.
